Tutti Frutti Cake

We are making Tutti Frutti cake today. YES, India’s most loved tea-time cake is on the menu today and we are going to make a delicious and super moist cake loaf.

Talking about Tutti-Frutti, these are simply small pieces of candied fruits, such as watermelon, raw papaya, cherries, pineapple. Along with these, you can use orange zest or lemon zest in the cake for flavoring, some spices like cardamom, nutmeg and cinnamon. I have used simple vanilla flavoring with tutti frutti, but you can always experiment with different items.

Tutti Frutti Cake

Ingredients you will need

  • Tutti Frutti (candied fruits)- 1/2 cup
  • All purpose flour- 1+1/2 cup and 1 teaspoon separately
  • Custard powder- 1 tablespoon, optional
  • Neutral tasting oil- 1/2 cup
  • Sugar- 1 cup
  • Eggs- 2, or 1/2 cup yogurt
  • Baking powder- 1+1/2 teaspoon
  • Baking soda- 1/4 teaspoon
  • Vanilla extract- 1 teaspoon (you can add spices of your choice)
  • Milk- 1/2 cup
  • Salt- 1/4 teaspoon

Steps:

  • Grease and line a loaf pan with parchment paper and preheat oven at 180 degree Celsius. Coat the tutti frutti with 1 teaspoon of flour and set aside.
  • In a bowl sieve together flour, custard powder, baking powder, soda and salt and put it aside.
  • In another large bowl, start with whisking eggs, sugar and oil together until fluffy and pale. If you are using yogurt instead of eggs, whisk until everything is well combined. Add vanilla extract and milk and whisk again.
  • To this add the dry ingredients and combine them to make a batter. Once the batter is ready, sprinkle the tutti frutti and very gently fold them into the batter. Do not over mix, or all of them will settle at the bottom. You can clearly see that mine did too 🙁
  • Transfer the batter to the loaf pan and bake for 40- 45 minutes at 180 degree Celsius or until a toothpick comes out clean. Leave the cake in loaf pan for 15 minutes and then let cool on a wire rack before cutting.
