Say goodbye to boxed pancake mix and try this no-fail, from scratch, recipe made with pantry staples and fruits. I am back after a break with a simple yet loved by all recipe, PANCAKES.
My nieces are visiting me and they loved making and decorating pancakes with me. In fact the pictures in this post are their creation.
The recipe calls for eggs, but you can make a vegan version as well. I will put down the details in note below. I couldn’t find maple syrup in the store, so using honey and chocolate syrup on top.

Ingredients you will need
- Egg- 1
- Milk- 1 cup
- Vegetable oil- 2 tablespoon
- Sugar- 2 tablespoon
- Vanilla essence- 1 teaspoon
- All purpose flour- 1 cup
- Baking powder- 2 teaspoon
- Salt- 1 teaspoon
- Strawberries- for garnish, optional
- Honey/ Chocolate Syrup/ Maple syrup- optional
Steps to make pancakes:
- In a large bowl whisk together egg, sugar, vegetable oil, milk and vanilla essence until well combined. To this add flour, baking powder and salt to make a smooth batter.
- Heat a griddle or non stick pan, and lightly grease it with butter. Pour 1/4 cup batter on the griddle to make a pancake. When the edges appear dry and bubbles start to appear, flip the pancake and cook the other side. Brown on both sides and garnish with fruits on top. Serve hot.
- To make vegan pancakes, skip eggs and substitute regular milk with a dairy free one. You will also be required to add an extra tablespoon of oil and couple of spoons of milk to make a flowing batter.
