Bruschetta- Best Summer Snack

Here is the recipe for the much loved Italian summer snack- Bruschetta. Who would have thought that a good bread, some ripe tomatoes marinated in balsamic vinegar and olive oil and basil could create such magic? And there is an Italian secret to making an even better bruschetta, ‘Garlic rubbed on toasted bread‘. This small step imparts tons of flavor in the tiny slice of bread. Making classic Italian bruschetta is a breeze and can be easily easily replicated by anyone. So let’s follow the recipe and make some 😉

Classic Italian Bruschetta
Prep time: 5 minuteCooking time: 5 minuteTotal Time: 10 minutes

Ingredients you will need:

  • Ripe Tomatoes- 2
  • Garlic cloves- 3
  • Basil leaves- 4
  • Extra virgin olive oil- 2 teaspoon
  • Balsamic vinegar- 1/2 teaspoon
  • Salt and black pepper- to taste
  • Good bread- 4 slices (preferably french baguette or sourdough)

Steps:

  • In a small saucepan or skillet, heat olive oil and put 2 cloves of minced garlic in it. Once garlic is light golden, remove from heat and transfer to another medium sized bowl. Save 1 clove of garlic for later.
  • Chop tomatoes and basil and add to the bowl. Combine salt, pepper, olive oil and balsamic vinegar. (I did not have fresh basil to added dried, and some coriander leaves for the green color )
  • Toast slices of bread either on a skillet or in oven. I am using my home made sourdough bread. Rub a half cut piece of garlic on both sides of the toasted bread. Trust me you will do it every time you eat toasted bread. Spread the tomato mixture on warm slices and enjoy the good summer breeze.

*You can make the tomato mixture ahead and serve as an appetizer at parties with toasted bread on side.
