Sticky spicy tofu with gochujang is a vibrant, flavorful dish that combines the savory, spicy, and sweet elements of Korean cuisine. This is a simple recipe that will win hearts straightaway. It is easy to prepare ahead. It can be enjoyed as a meal with rice. It can also be part of a larger meal with other elements. Here’s what makes this recipe so good :
- Tofu: Tofu cut in cubes, marinated in a gochujang paste and pan-fried until crispy on the outside while remaining soft and creamy inside. This texture contrast is key to the dish.
- Gochujang: This Korean chili paste is the star of the sauce. It’s fermented, giving it a deep umami flavor with a balanced sweetness and a spicy kick. The gochujang paste is used to marinate tofu and later in the sauce to coat vegetables and tofu.
- Sauce: The sauce is a mix of leftover gochujang marinate, soy sauce, sugar, ginger and garlic. Spice kick from gochujang and that sweet salty flavor covers tofu into this sticky sauce, that is so flavorful.
- Garnishes: To finish, the dish is topped with sliced scallions.
- Accompaniments: Sticky spicy tofu can be served over steamed rice, noodles, or as part of a larger meal with vegetables and pickles.

Ingredients you will need:
- Tofu marination
- Firm Tofu: 1/2 block (approx 8 oz)
- Gochujang: 1 tablespoon
- Cornstarch: 1 tablespoon
- Salt: to taste
- Oil: for pan frying
- For the sauce
- Oil: 1 tablespoon
- Onion: 1/4 cup, chopped
- Ginger: 1 inch, minced
- Garlic: 3 cloves, minced
- Spring onion/ Scallion: 3-4 full stocks
- Carrot: 1, sliced
- Dark soy sauce: 1 tablespoon
- Sugar: 2 teaspoons
Steps to make Sticky Spicy Tofu:
- In a large bowl prepare the marination by mixing gochujang, cornstarch, salt and 1/4 cup of water. Cut tofu block in cubes and mix the prepared marinate. Leave for 10 minutes.
- Heat oil in a pan and shallow fry tofu cubes until lightly brown and crispy from outside. Do not throw the leftover marinate in the bowl, it will be used in the sauce. Take out tofu cubes and set aside.
- In the same pan, add more oil and cook chopped onion lightly. Mix in minced ginger and garlic and cook for about 2 minutes until that raw smell goes.
- Take the white part of spring onion and cut in small pieces, add them to the pan, along with carrots. Sauté for about a minute, followed by 1/2 cup of water, gochujang marinate, soy sauce and sugar.
- Cook this sauce on medium heat as it starts to thicken, mix tofu pieces and garnish with chopped spring onion.
- Serve warm with sticky rice and side salad.
