Sharing my recipe for a simple loaf of bread, that comes together in less than 20 minutes. All you have to do is let it rest for a couple of hours and then bake. Using only 5 ingredients, this simple recipe turns flour-water mass into a delicious bread.

Generally I bake sourdough bread with my starter, but for a change I am making one with instant yeast.

Bread making is an art that soothes the soul and can act as a stress buster for some people. The rhythmic movements of kneading the dough would calm you the aroma while you bake is the ultimate reward.

I decided to make this loaf with bread flour, but you can totally use the same recipe for a simple whole wheat bread loaf. As a general rule, I’ve used flour to water ratio as 2:1, but you might will have to adjust this based on the type of flour and humidity in your kitchen. A tablespoon less or more should do the trick.

Ingredients you will need:

  • Bread flour- 2.5 cups
  • Water- 1.5 cups, lukewarm
  • Sugar- 1.5 teaspoon
  • Salt- 1 teaspoon
  • Instant yeast- 1 teaspoon

Super Easy Bread Recipe

Steps to make super easy bread:

  • Start by mixing sugar in lukewarm water in a large bowl. Make sure the water is lukewarm after all sugar is dissolved. If not, heat it in a microwave for 5 seconds.
  • To this add yeast and mix lightly, leave for 5 minutes for the yeast to bloom and activate. If your yeast has not bloomed, start the process again.
  • To the bowl add flour and salt and mix everything to form a dough. Once it starts to come together, empty contents on a clean kitchen counter and start kneading for about 5-6 minutes until the dough becomes shiny.
  • Form a boule and place it in a greased bowl, covered with a cling film and let rest for about 1-2 hours on kitchen counter or until it doubles in size. If your kitchen is cold (less than 20 degree celsius), place the bowl in oven with only the light on.
  • Once the dough doubles gently deflate it and pat to make a rough rectangle. Perform a letter fold (refer video below) to make a log. Place it seam side up in a banneton or a bowl lined with kitchen towel dusted with rice flour. Sprinkle flour on top of the log and cover with a plastic wrap.
  • Let the dough proof overnight in the refrigerator, or you can let it proof on the counter for another 1 hour and bake after that. In my personal opinion, proofing overnight develops the flavour.
  • Pre-heat oven and a dutch oven inside it at 250 degree celsius for about 15-20 minutes.
  • Take the dough out of the banneton on a sheet of parchment paper and score the bread. Place it in the dutch oven and bake for 20 minutes. After that remove the lid of the dutch oven and bake for another 10 minutes.
  • Take the bread out and let it rest for at least 1 hour before slicing.
