Today I bring to you a recipe that is just going to fill you up with happiness, so much happiness. You can’t stop smiling after having this Orange Cake, perfect for a summer weekend, weekday or any day. This orange cake is a recipe that I learnt from a Nonna in Italy, and believe me no one bakes better cakes than Italian Nonna. The freshness and aroma is like a magnet, and you would want to bake it everyday.
Whenever I bake this cake, my home gets filled with aroma of oranges and it takes me straight to the Amalfi coast in Italy. This is where I learnt this cake, and I hope you experience something special when you bake it.
A simple recipe with handful of easily available ingredients. It’s a sweet cake with slight bitterness from the peel. We are going to use a full orange, no peeling, no cutting, and this is what makes this cake amazing. Let’s get started.
Prep time: 30 minutes | Cooking time: 60 minutes | Total time: 1 hour 30 minutes |
Ingredients you will need:
- Eggs- 3
- Sugar- 1+ 1/4 cup
- Neutral tasting oil- 1/3 cup
- Curd/ Yogurt- 1/3 cup
- All purpose flour- 1+ 3/4 cup
- Baking powder- 2.5 teaspoon
- Vanilla extract- 1 teaspoon
- Orange- 1
Egg substitute:
For each whole egg used, you can substitute it with one of the following:
- 1 tablespoon ground flaxseed+ 2 tablespoon water
- 1/4 cup yogurt
Steps to make orange cake:
- In a pot, boil 3 cups of water and put the whole orange in it. No peeling, no cutting the orange, just put the whole piece to boil for 10 minutes. After that, take it out, cut in 4 pieces and remove seeds, and grind to make a lumpy paste. Set aside to cool down.
- Pre-heat the oven at 180 degrees Celsius for 15 minutes, and line a 8 inch cake tin with parchment paper.
- For the cake, whisk together eggs, oil and sugar until creamy and well mixed.
- Add vanilla extract, curd and combine well. To this, add the flour and baking powder to make a batter. Now mix the orange paste and pour the batter in baking tin.
- Bake the cake for 55-60 minutes at 180 degree Celsius, until golden and cooked through. Cool down on a wire rack and enjoy the summer.
