Parmesan Crusted Pumpkin Slices

Creamy, satisfying parmesan crusted pumpkin slices are as easy as fancy food can be. Perfect veggie main course for festivities.

Pumpkins are such versatile vegetables, you can se them as whole, make ravioli filling, cakes, latte, Indian style tangy curry. What can you not do with pumpkin? And the answer lies in their subtle flavor, and the flesh that gets soft on cooking, absorbing all the flavors and aromas other ingredients have to offer. And with all this they are even packed with Vitamin A and supposed to be very healthy and good for eyesight.

For this recipe you can use any type of pumpkin, the baking time may differ by a few minutes. I’ve tried the same recipe with zucchini and eggplants too, and they turn out amazing as well. It is an inspiration from Ottolenghi’s Plenty and has been adjusted to availability of ingredients in my panty.

One of the best things to make with Pumpkin is a Pumpkin Cake or Bread which is delicious on its own, and even better as a french toast. Some other recipes that you would like to try are Buddha Bowl and Creamy Roasted Tomato Toast.

Ingredients you will need:

  • Pumpkin- 500g, with skin
  • Parmesan- 50g, grated
  • Breadcrumbs- 20g
  • Parsley- 2 tablespoons, finely chopped
  • Thyme- 2 teaspoon
  • Lemon zest- 1 tablespoon
  • Salt and pepper- to taste
  • Garlic- 2 cloves
  • Olive oil- 40ml


Steps to make Parmesan Crusted Pumpkin Slices:

  • Start with preheating the oven to 190°C. 
  • To make the parmesan crust, in a bowl mix together all ingredients except pumpkin slices and olive oil. Remember to use salt in moderation because parmesan is itself salty. Prepare the crust mix and keep aside.
  • Cut the cleaned pumpkin into 1cm think slices and put them on a baking tray, lined with parchment paper.
  • Apply olive oil with brush on both sides of the pumpkin slices and sprinkle the crust mix with a spoon, making an even layer.
  • Bake the slices for 30 minutes at 190°C, or until the flesh is tender. If the crust mix starts to darken, cover loosely with foil.
