Does it ever happen to you, that a sudden craving of dessert is killed by the effort to make a huge batch? Or maybe you just don’t want any leftovers hanging around in the house? And this is where a small batch recipe, that needs just 10 minutes worth prep, comes to rescue. Trust me, this recipe of a mini apple crisp is something that you need to keep handy, because you would want to make this again and again.

You need just 7 ingredients for the recipe, things that you available in all households. The filling is a mixture of chopped apples, little bit of flour and brown sugar. And if you have a large group to feed, you can always bake an Apple Cinnamon cake and serve it with a vanilla ice cream.

Pro-tip: Chop apples in about the same size, so that they bake evenly

I am using ramekins to bake the apple crisps, you can even use an oven safe mug or bowl for baking these. For the topping, you will need flour, rolled oats/ old-fashioned oats, cinnamon powder, brown sugar, butter and pinch of salt. See its a simple list of ingredients, that turns into a delightful dessert.

Ingredients you will need:

  • Apple- 1 medium (peeled and chopped)
  • All purpose flour – 2 teaspoon
  • Brown sugar- 2 tablespoon
  • Cold butter- 1 tablespoon (unsalted), substitute with 1 teaspoon coconut oil for vegan
  • Oats- 2 tablespoon (slightly crushed in mixer)
  • Cinnamon powder- 1/4 teaspoon
  • Salt- 1 pinch

Steps to make mini apple crisp:

  • Preheat the oven at 180 degree Celsius for 10 minutes. In a bowl, mix the chopped apples with a teaspoon of flour and 1 tablespoon of brown sugar, and divide between 2 ramekins.
  • In the same bowl, put rest of the ingredients and work the mixture with your hands, until it resembles coarse crumbs. Use 1 teaspoon of coconut oil as a substitute for butter when making vegan apple crisp.
  • Spread this mixture on top of the apples evenly and bake for 20-25 minutes at 180 degree Celsius.

Enjoy on a rainy evening or a quick late night dessert. Serve with a scoop of vanilla if desired.
