Eggless Milk Cake

This cake tastes like sweet milk and smells heavenly because of cardamom, and is something everyone in your family will love. Your home is going to smell so nice while you bake it, you would want that everyday.

I always like to bake a simple cake that can be enjoyed with tea or coffee during the evening. This eggless cardamom cake sits perfectly on a tray with tea and some cookies. It is basically a vanilla pound cake, where the egg has been replaced with condensed milk along with the addition of cardamom powder, which elevates the aroma and flavour. Each bite reminds you of a soft and airy tres leches, which takes time to set. Whereas, this is a shortcut for similar flavour and feel.

The good thing about this cake is that it stores well in the refrigerator for about a week. You can leave it out for like 15 minutes before consuming or simply microwave for 10-15 seconds. I am using sweetened condensed milk in the recipe, and that is why the amount of sugar used separately is less. If you are using unsweetened condensed milk, then increase sugar quantity to 1 cup instead of 1/3. Additionally, I am using pistachio powder as a garnish, which is completely optional. You can sprinkle almond slivers on top, or just use icing sugar for a beautiful looking cake.

Ingredients for Eggless Milk Cake

  • Vegetable oil- 1/3 cup (any neutral tasting oil)
  • Sweetened condensed milk- 1/2 cup
  • Sugar- 1/3 cup (increase to 1 cup if using unsweetened condensed milk)
  • Milk- 1/2 cup, warmed up
  • Vanilla extract- 1/2 teaspoon
  • All purpose flour- 1.5 cup
  • Baking Soda- 1/2 teaspoon
  • Baking powder- 1 teaspoon
  • Salt- a pinch
  • Cardamom powder- 1/2 teaspoon
  • Pistachio powder- 2 teaspoon, optional

Eggless Milk Cake Recipe

Steps:

  • Preheat oven at 180 degrees Celsius and grease and line a loaf pan or 6 inch round cake pan with parchment paper.
  • In a mixing bowl, whisk together oil, condensed milk and sugar until well combined.
  • To this mixture add warm milk and vanilla extract.
  • Add all the dry ingredients, flour, baking powder and soda, salt and cardamom powder to the wet mixture. Combine everything to get a smooth batter.
  • Pour the batter in baking pan and sprinkle pistachio powder. Bake at 180 degree celsius for 35-40 minutes, or until a tester comes out clean.
