Basil Ice-cream

Basil is sort of the most used herb in Italian cuisine, mainly savory, but it also works wonders in desserts. I once tried basil ice cream with brownie at a restaurant, and went head over heels for it. The subtle and deep flavor of basil, combined with the fudgy dark chocolate brownie can make anybody’s day.
It’s a simple 4 ingredients, vegetarian recipe that does not require much effort. Mine kind of turned a little icy, because I lost power for like 6-7 hours after it was set. So, generally if the ice cream is set and if it melts and re-sets, it gets icy.

Ingredients you will need
- Basil leaves- 3/4 cup
- Full fat milk- 1 cup
- Sweetened condensed milk- 1 cup
- Heavy cream- 300 ml
Steps to make Basil Ice-cream:
- In a deep pan, start by heating milk and basil leaves, until it comes to a boil. Cover the pan and let basil steep till it cools down.
- Put this milk mixture in a blender jar along with the condensed milk, and blend everything. Adjust sweetness as per your liking. Strain the liquid through a sieve and keep aside.
- Whip the heavy cream until stiff peaks and fold the basil milk liquid slowly.
- Freeze in a freezer safe container for at least 5 hours, and you have yourself a lovely and decadent basil ice-cream.
Serve it with a hot brownie, or simply relish on its own 🙂
