Summer Special Apricot Cake

Let’s make an amazing tea cake that is a must in summers. Often so, whenever I but apricots here in Pune, their looks are better than the taste and I choose to use them in a cake. Once baked, they taste sweeter with the perfect amount of tartness. This recipe makes a small tea/coffee cake, which tastes good no matter the type of apricots.
I am using dried apricots today, since they are easily available everywhere, but you can use fresh ones and skip the first step of rehydrating them. To make a vegan or vegetarian version, egg substitutes are mentioned below.

Ingredients you will need:
- Dried apricots- 1 cup
- Neutral tasting oil- 1/2 cup
- Brown sugar- 3/4 cup (you can use regular sugar)
- Eggs- 2 (vegan/vegetarian substitutes below)
- Vanilla extract- 1 teaspoon
- All purpose flour- 1.5 cups
- Baking powder- 1.5 teaspoon
- Salt- 1/4 teaspoon
- Milk- 1/4 cup (substitute with coconut milk)
- Sugar- 2 tablespoons
- Ground cinnamon- 1 teaspoon
Egg substitute:
For each whole egg used, you can substitute it with one of the following:
- 1 tablespoon ground flaxseed+ 2 tablespoon water
- 1/4 cup yogurt
Steps:
- Start with preheating oven at 180 degrees celsius and lining a 9 inch baking pan with parchment paper.
- In a small pan, boil apricots with 1 cup of water in medium heat for about 7 minutes, until apricots are soft. Drain the water, chop apricot pieces roughly and set aside to cool down.
- In a large bowl, whisk together brown sugar, oil and eggs until fluffy and well combined. Mix in vanilla extract and whisk again.
- To this wet batter, add flour, baking powder, salt and start mixing slowly, incorporating milk gradually.
- Fold the chopped apricots into the batter and pour batter in the baking pan.
- In a small bowl combine the raw sugar and ground cinnamon and sprinkle this mixture on top of the cake batter.
- Bake for 30 minutes at 180 degrees celsius or until a skewer inserted comes out clean. Serve warm.
