Aromatic Apple Cinnamon Cake

I like cakes, or as a matter of fact, all desserts that are not overly sweet, and this apple cinnamon cake is no different. Cakes with fruits are always refreshing because of the combination of sweet and tart favours marrying together. Some of the amazing cakes I’ve baked with fruits are Orange cake, Peach cake, and Mango pound cake.

Apples with a hint of cinnamon are a match made in heaven. That little bit of spice elevates the flavour and aroma profile to another level. Cinnamon’s comforting and warm flavour is often associated with winter months and dishes eaten during that time of the year like cinnamon rolls, apple crisp, pumpkin recipes, etc. Mulled wine is another example of use of cinnamon to flavour alcoholic beverages enjoyed during Christmas. With cinnamon’s sweet and aromatic profile, cinnamon also has health benefits and is a good source of Vitamin K, Iron and Calcium.

The recipe has eggs, but I have put down substitutes for a vegan version below. It is a simple recipe and packs a bunch of flavour with the aroma will make everyone salivate. I am going to layer the apples on top in a circular fashion and then dust with cinnamon sugar. You can also chop them in small pieces and mix on the batter for fussy eaters. Right before serving, it is best to dust powdered sugar for a quick hit of sugar on the taste buds.

Ingredients for Apple Cinnamon Cake

  • For the Topping
    • Apples- 2, thinly sliced
    • Lemon juice- 1 teaspoon
    • Sugar- 2 tablespoon
    • Cinnamon powder- 1 teaspoon
  • For the Cake
    • Oil- 1 cup
    • Sugar- 1 cup
    • Eggs- 2 (vegan substitutes below)
    • Egg yolk- 1
    • Vanilla extract- 1 teaspoon
    • Milk/ Plant based milk- 3/4 cup
    • All purpose flour- 2.5 cups
    • Baking powder- 2 teaspoon
    • Cinnamon powder- 1 teaspoon
    • Salt- a pinch

Egg substitute:

For each whole egg used, you can substitute it with one of the following:

  • 1 tablespoon ground flaxseed+ 2 tablespoon water
  • 1/4 cup yogurt

Aromatic Apple Cinnamon Cake Recipe

Steps:

For the topping

  • Thinly slice 2 apples and pour lemon juice on top and mix with hands. Keep aside.
  • In a small bowl, mix sugar and cinnamon powder to make cinnamon-sugar and keep aside.

For the cake

  • Preheat oven at 180 degree celsius. Grease and line 8 inch baking pan with parchment paper.
  • In a large bowl, whisk together eggs, oil and sugar until fluffy and light. To this add milk and vanilla and whisk again.
  • Using a sieve add all dry ingredients for the cake and whisk gently to make a batter.
  • Pour batter in the baking pan and place overlapping apple slices in a circular fashion on top. Sprinkle cinnamon-sugar and bake at 180 degree celsius for 60 minutes, or until a toothpick comes out clean.
  • Dust powdered sugar on top before serving.
