Here is the recipe for a very nutritious, fibre rich and tasty oats khichdi. It is the perfect dish for people who do not like oats, just like me. Oats are generally hated for their mushy texture when cooked, but are prized for their nutritional value and health benefits.

Khichdi is an Indian savoury porridge generally made with dal and rice cooked together with vegetables and spices. Every household has a different recipe and it can be made in a million ways with variety of dals and instead of rice, dalia, bajra or even oats are used.

One pot recipe, easy to make and needs only pantry staple ingredients. You can use any variety of available vegetables like lauki, cauliflower, broccoli, potatoes, etc. and no one will know that you have added so many of them. Amazing for kids who are very selective of the vegetables they eat. I have also used oats in my Apple Crisp dessert, and believe me, they taste amazing.
To make a vegan version, just substitute ghee with oil and you are good to go. Oats are rich in protein, dietary fibre, vitamins and calcium, and are gluten free. You can serve it with fresh yogurt and some salad on the side. So let’s make this super healthy and power packed one pot khichdi.

Ingredients you will need:
- Rolled oats- 1+1/4 cup
- Moong dal (yellow lentils)- 1/2 cup
- Onion- 1 small, chopped
- Carrot- 1 small, chopped
- Green peas- 1/4 cup
- Tomato- 1 medium, chopped
- Garlic-2 cloves, chopped
- Ginger- 1 inch, chopped
- Green chillies- 2, chopped
- Ghee- 2 teaspoon
- Jeera (cumin seeds)- 1/2 teaspoon
- Turmeric powder- 1 teaspoon
- Red chilli powder- 1/2 teaspoon
- Salt- to taste
- Garam masala- 1/2 teaspoon
- Water- 4.5 cups
- Lemon juice- 2 teaspoon
- Fresh coriander leaves- for garnish
Steps to make Oats Khichdi:
- Wash and soak moong dal for 10 minutes while you prepare other ingredients.
- In a pressure cooker start with heating ghee. Add jeera once the ghee is hot, followed by garlic and onion. Stir for a while and then add ginger and green chillies as well. Cook this for about a minute on medium heat.
- To the cooker now add carrot, peas and tomatoes with turmeric powder, red chilli powder and salt. Mix all and let it cook for another minute.
- Drain the water from moong dal and add it to the cooker with oats. Mix everything so that oats can absorb the moisture from vegetables. Add 4.5 cups of water followed by garam masala and close the pressure cooker.
- Cook for 10 minutes on medium heat or until 2 whistles. Turn off the flame and let pressure release completely before opening the cooker.
- Serve with a squeeze of fresh lemon on top with coriander leaves.
