Avocado Toast with Balsamic Reduction

A simple and super healthy recipe is on your way. Crisp slice of bread with creamy avocado, topped with fresh tomatoes and balsamic reduction, is going to make your day. Perfect for breakfast, this recipe will keep you full and nourished.
Avocados are a great source of folate, fibre and potassium, and helps reduce LDL levels or the bad cholesterol. The creamy texture resembles butter and adds an oomph to the toast. All you need is good bread, preferably sourdough slices, but normal white or brown bread would also do. I am using my homemade sourdough bread with caraway and flaxseeds. A ripe avocado, tomato, lemon juice, fresh greens, and balsamic vinegar, and in less than 10 minutes you will have a delicious plate of Avocado Toast.

Ingredients you will need:
- Avocado- 1 ripe
- Bread- 3 slices, any type you like
- Tomato- 1, chopped
- Lemon juice- 1 teaspoon
- Arugula- 5-6 leaves (any fresh herb would do)
- Balsamic vinegar- 1/4 cup
- Salt and black pepper- to taste
- Zaatar– 1/4 teaspoon, optional
Steps to make Avocado Toast:
- In a small pan, start heating the balsamic vinegar on low heat. Let it simmer for about 5 minutes, keep stirring and then take it off heat once reduced to half. It should cool down before using it on our avocado toast.
- Mash the ripe avocado with the help of a fork and add salt, pepper and lemon juice to make a creamy mixture.
- Toast bread slices and spread avocado evenly on them. You can use a fork to make lines, just to make it look more beautiful.
- Spread chopped tomatoes and arugula leaves on top of it.
- Just before serving, put a teaspoon of balsamic vinegar on each slice and sprinkle zaatar.
