Palmiers- Heart of France

Palmiers are classic French sugar cookies also known as the Heart of France. There are made with a puff pastry and come together in less than half an hour. I use my homemade rough puff to make these, but you can use store bought as well. Make sure to buy the one which is made with 100% butter. Shortening or margarine in puff pastry just doesn’t do justice to Palmiers. For sugar, I am using a mix of cinnamon sugar and regular granulated sugar, but you can also use demerara or brown sugar for these. There is no rule that you cannot mix different sugars and bake these beauties.
You will need just 2 ingredients to make palmiers, yes you read it right…. TWO INGREDIENTS. What makes these cookies extraordinary is the crunch from baked sugar and puff pastry, and the way buttery & flaky pastry melts on your tongue. They look so fancy on a tray with a cup of tea.

Ingredients you will need:
- Rough puff pastry– 1 frozen sheet
- Sugar- 1/2 cup
- Cinnamon powder- 1 teaspoon, optional
Steps:
- Let the frozen pastry sheet thaw in refrigerator over night or 24 hours. You can thaw it on counter as well, but make sure that it remains cold, else the butter will melt. I am using my homemade rough puff pastry dough for this recipe.
- Between two sheets of parchment paper, roll the pastry sheet in a rectangle that is 1/8 or 1/4 inch thick. Parchment paper will help in folding the pastry, as it tends to stick to the bottom.
- Sprinkle granulated sugar mixed with cinnamon powder, or plain sugar on the pastry sheet evenly. Move a rolling pin gently on the sheet so that the sugar sticks to the pastry.
- Fold the left and the right side inwards, so that they meet in the middle. Sprinkle some sugar on the dough and press gently. Repeat the process again.
- Fold the left side on the right one, like closing a book, making a long and flat length of dough. If you feel that butter is becoming soft, wrap this log in a plastic film and chill for 30 minutes.
- Preheat oven to 220 degrees Celsius and line a baking tray with parchment paper. Use a sharp knife to cut the log into cookies 1 inch wide. Place these cookies on a baking tray with cut side up, make sure to leave gap while placing these on the tray.
- Bake for 8-10 minutes on one side and then turn using a spatula. Bake the second side for another 8 minutes or until beautifully golden brown. Cool on a wire rack before enjoying.
